Fluffy Cappuccino Pancakes with Mocha Syrup

Makes 4-6 servings, or just two if you are in for a hectic day

Cappuccino Pancakes

1 1/2 cups all-purpose flour
1 tbsp baking powder
1 tbsp espresso powder (or finely ground coffee)
2 tbsps granulated sugar
1/2 tsp salt
1 egg
1 cup milk
2 tbsps melted butter

In a large bowl, whisk together flour, espresso powder, baking powder, sugar, and salt. Add the egg, melted butter, and milk. Mix together until well-incorporated (a few lumps are fine).

Pour 1/4 cup of the pancake batter onto a heated pan or griddle and cook each side until lightly browned. Serve hot with whipped cream and mocha syrup (see recipe below).

Mocha Syrup

1/2 cup brewed coffee from Nespresso pods or capsules
1/4 cup dark or regular cocoa powder
1/4 cup caster sugar
1/4 tsp salt
1 tsp vanilla extract

In a small saucepan, mix together coffee, sugar, cocoa powder, and salt and simmer over medium-low heat. Constantly stir until syrup begins to reduce and thicken. Turn off the heat and stir in vanilla extract. This syrup may be served warm or chilled in the fridge for other yummy purposes, like topping your favorite ice cream.
